BALI ORIGINAL’S WINERY



Since the end of 80's, Bali grapes have entered an era of glory. Production surged and market demand was getting higher, but it did not last long. Almost in the mid 90's there was a sharp decline, the price of grapes could not cover the high costs of production plus fast-rotten grapes. To improve the prestige and selling value of grapes, the grapes are processed into wine. Wine is an alcoholic beverage made from fermented grapes. Even though wine is an alcoholic beverages, it has many benefits if consumed with the right dose, such as: contains antioxidants that attack free radicals, reduce bad cholesterol levels, boosts the immune system, increases bone dencity, reduce the risk of stroke & heart disease, reduce the risk of diabetes & cancer, and also promotes longevity. Bali must be proud because in 1994, Mr. Ida Bagus Rai Budarsa founded Hatten Wines, the first and only true Balinese winery, and introduced the taste of Balinese wine to hotel and restaurant tables throughout Indonesia. Later on, Bali is not only famous for its beaches, culture and nature, but also the Bali original’s winery products, namely Hatten Wines.

Most of the wine produced by Hatten Wines comes from local grapes picked by farmers. The North East of Bali has long been a grape growing area and Hatten Wines have found this region suitable, owing to the abundance of sunshine, clear mountain water and rich volcanic soil found in the area. Type of grape produces wine that comes from three good quality grape varieties. Alfonso de lavalle, known as the black Singaraja wine, was chosen to produce Rose, Red Aga, Jepun Sparkling Rose, and Pino de Bali Red. In addition, they also plant Belgium grapes and Probolinggo Biru grapes as raw material for local Aga and Tunjung Wine types. These grapes allow Hatten Wines to produce throughout the year because there is no period of "sleep" in tropical climates as in Europe.

The winery is located close to the main business centre in Jalan Danau Tondano, Sanur. The Hatten Wines winery is a modern state of the art facility with stainless steel vessels, refrigeration, installation, a horizontal press, 56 large wine tanks, fermenters, a bottling room, filters of various types and an up to date laboratory facility. The whole process of making wine is done at its own factory. There, fermentation techniques are used after going through the crushing and deposition stages into the dry tank to produce a juice that is completely clear of cream or clean from deposits. This fermentation process can take about one to two months. Specifically red wine, need to poured first into a barrel made from Oaks wood. This process is much longer than white wine, which requires the announcement time to a maximum of 18 months.

Hatten Winery is not open to the public, but they provide knowledge to get to know deeper wine specifically for networks, or certain outlets related to hotels, restaurants and cafes. Especially tourists, can visit the vinyard from the main road towards the beach, starting from the tourist town of Lovina until the beach resort of Pemuteran in Buleleng Regency. There, tourists will be invited to tour the vineyard while sipping on the types of wine available through a tour package. Beside that, they also held a Wine Appreciation class, including Wine Testing and Food Pairing Class, which can be enjoyed by all wine connoisseurs, both those who are new to study and those who are experts. In this class, participants will be led to a magnificent dining room with a long table on the 2nd floor of the House of Hatten Wines building in Sanur. There were neatly arranged several chairs that could be occupied, along with several glasses of wine in front of each participant's seat. Afterward, Mrs. Ni Nyoman Kertawidyawati will guide the class with the introduction of wine with various levels of sugar and alcohol as well as aromas and flavors, how to taste wine with the right techniques, and how to enjoy the right wine as a pair of each dish served (including chicken , fish, beef, with various types of sauces and seasonings).

Classes that are held every Wednesday afternoon can be followed if there are at least 8 participants, at a cost of only Rp.350,000 per person.
